It feels like no matter where I look these days, the Instant Pot always makes an appearance. Well, since I love keto I figured I would combine these two sensations and hunt down some keto instant pot recipes.
Whether in a hunger-inducing cooking video on Facebook, while scrolling through some of my favorite recipe blogs, or during conversation when I am out with my girl friends, I am told that this is the kitchen appliance I must have.
I don’t have an Instant Pot or pressure cooker yet (although I am now seriously considering getting one), so I asked my friends what it was about it that they loved so much. This summarises their responses…
An instant pot makes cooking much faster, and more convenient. It also saves energy, and foods retain most of their nutrients. It is also fantastic to use in summer, because it doesn’t heat up the kitchen like an oven would.
It is quite small, too, so it barely takes up any kitchen space. In fact – a couple of my friends own two Instant Pots, because of how versatile they are.
Before investing in an Instant Pot, I had to make sure I would get use out it, while following a ketogenic diet. It turns out, there are so many fantastic keto-friendly recipes already created specifically for the Instant Pot.

I’d never heard of making a lasagna in an Instant Pot until I came across this recipe. I love eating lasagna, but I do not enjoy making it. All those layers!
This Instant Pot No Noodle Lasagna actually looks quite easy to put together, and only requires 8-10 minutes of cook time.

Egg cooks surprisingly well in an instant Pot. This Pressure Cooker Keto Poblano Cheese Frittata is keto-friendly as it has no crust (unlike with a traditional quiche).
Once you have finished cooking, you can broil it with some cheese to give a crispy, slightly browned, top layer.
This is a great recipe for when you have guests over for breakfast or brunch.

Pot roast is a Sunday lunch staple for many households, and for many years. It is no surprise pot roast is so popular – this one-pot wonder is easy to make, the leftovers keep well during the week, and it fills the house with delicious aromas.

We love Mexican food in our house. Tacos, chili, empanadas – we’ll eat it all. We definitely couldn’t give up on our favorites when going keto, so I am always on the lookout for low-carb Mexican recipes to try out.
This Keto Low Carb Chili doesn’t contain beans, which reduces the carb count significantly.
It freezes well, so you can make a big batch in one go, and freeze individual portions to have later on.

I love garlic. I try to use it quite a lot of my meals. If only it didn’t smell quite so bad the next day! (Luckily my husband loves garlic, too.)
Although this recipe is called Keto Pressure Cooker Garlic Butter Chicken, it actually uses ghee instead of butter. Ghee is clarified butter – it has slightly more fat, and minute amounts of lactose and casein. It is ideal for those with lactose-intolerance or dairy allergies.
Serve with low-carb veggies (spincah is recommended) on the side for a complete meal.

You didn’t think I’d skip the dessert options, did you?
It turns out, the Instant Pot is also great for making amazing desserts, quickly and easily.
We don’t make desserts often, but I do like have a few good recipes up my sleeve to whip out when we have guests, or when we are visiting friends and family.

This Instant Pot Low-Carb Cheesecake requires a little more patience than most other Instant Pot recipes. After cooking for 45 minutes, it needs to be refrigerated for 8 hours. With only 3g net carbs and a whopping 24g of fat per slice, it will be worth the wait.
As this recipe doesn’t have a crust, it is recommend to line your push pan with foil to prevent leaking.

I love how this dessert is made in little individual pots! It is a good way to make sure you don’t eat too much in one go, and also looks impressive when you have guests.

Cake in an Instant Pot? Now I have seen it all! It is hard to imagine that a cake can be ‘baked’ without being in an oven. But the Instant Pot has proven me wrong!
I can see myself making a Instant Pot Keto Carrot Cake in the summer though, so I won’t have to turn on the oven and make the kitchen even hotter!
